As an experiment....
I made soup yesterday.
Anyone that knows me knows I cook, and that about 90% of the time it's edible. But...I MADE SOUP! From scratch and it was delicious!
Bought a cheap hand blender thingy from asda for the amazingly cheap price of £3.80. Bought a big stainless steel cookpot from them too for £8.
I tested the soup on Joe's lot and it went down very well, I will probably be making soup quite a lot from the noises they made.
Anyway my recipe for tomato and veg soup.
2 veggie stock cubes
About a pint and a half of water
3 medium potatos
3 tins of tomatoes
An onion
A carrot
A number of mushrooms (I dunno we had about 12)
Mix the stock cubes with boiling water till they melt.
Chop all the veg fairly small, and simmer with the stock for about an hour.
Add basil and black pepper and a pinch of salt.
Then blitz with hand blender until you get the consistancy you like.
This made about 6 large bowls of soup.
I have to say the hand blender I bought is really good for the price. It was so cheap I was expecting it to be a bit nellie but I was suprised at the power. It was whizzy enough to create a vacuume in the pot and move it across the stove!
